Ingredients
- 1 cup Shredded Carrots
- 1 cup Almond Flour
- 1/2 cup Peanut Butter
- 1 Large Large
- 1/4 cup Coconut Oil
- 1 tablespoon Honey
- 1 tablespoon Baking Soda
Instructions
- Preheat Your OvenSet your oven to 350°F (175°C) and allow it to fully preheat while you prepare the cake mixture.
- Prepare the CarrotsMeasure 1 cup (140g) of shredded carrots. You can grate whole carrots with a hand grater or pulse baby carrots in a food processor until fine.
- Mix the Wet IngredientsIn a large bowl, combine 1/2 cup (128g) peanut butter (if using), 1/4 cup (60g) melted coconut oil, 1 large egg, and 1 tablespoon (21g) honey. Stir until well blended.
- Add the Dry IngredientsTo the wet mixture, add 1 cup (112g) almond flour and 1 teaspoon (10g) baking soda. Fold in the shredded carrots and mix until a thick, uniform batter forms.
- Grease and Fill Your PanLightly grease your chosen baking dish with a bit of melted coconut oil. Pour the batter in and spread evenly across the pan.
